Jiles and Yvonne Halling spent 10 years living and working in Champagne. Jiles worked for Moet et Chandon and Yvonne ran a B&B from their home in Verzy.

During that time, Jiles built up a vast amout of knowledge about all things bubbly, making lots of contacts in the region, and getting to know the people who've lived there for centuries while crafting their products with love and passion.

Les Molyneux is a beautifully restored former grape-grower’s farmhouse in the centre of one of the best villages in Champagne. When we say ‘one of the best villages’ we mean Grand Cru. This is the classification given by the French government to only 17 villages in the region, where the grapes grown are of the highest quality.

Les Molyneux was built in the mid 19th century, and was carefully restored in 2000 retaining many original features including exposed beams and stripped floors.
