Chablis is a small Burgundy wine region along the valley of the river Serein, near Auxerre. It stretches over 3,500 hectares shared between twenty towns and villages (Beine, Béru, Chablis, Fyé, Milly, Poinchy, La Chapelle-Vaupelteigne, Chemilly-sur-Serein, Chichée, Collan, Fléys, Fontenay-près-Chablis, Lignorelles, Ligny-le-Chatel, Maligny, Pouilly-sur-Serein, Préhy, Villy, Viviers and Courgis). The first vines were planted in the 12th century by Cistercian monks from Pontigny abbey. Nowadays, Chardonnay, the sole grape varietal in Chablis, provides the ultimate expression of vineyard character. Its hallmark minerality derives primarily from Kimmeridgian limestone recognisable by oyster fossil deposits a few millimetres in size.
These components combine to make Chablis a unique wine, acknowledged the world over for its quality and authentic character.
